. . Special Ghee Rice

Thinking of preparing something special for lunch on Sunday? Here’s something new to add that will add that extra bit to your meal.

Ingredients 
01. Basmati rice - 3 cups
02. Cloves - 6
03. Cinnamon - 2 ”pieces
04. Cardamom - 6
05. Coconut milk - 6 cups from 1 coconut
06. Ghee - 3 tsp
For the ground paste
07. Dry red chillies - 4
08. Coriander powder - 1 tsp
09. Ginger -  garlic paste - 1 tsp
10. Shallots - 10
11. Cumin seeds - ½ tsp
12. Cloves - 4
13. Cinnamon  - 1 “ piece
14. Oil - ¼ cup
15. Lemon juice - of ½ a lemon
16. Onions (sliced) - 2
17. Saffron - a pinch dissolved in 1 tsp milk
18. Salt - to taste



Preparation 
01. Grind the dry red chillies, coriander powder, ginger – garlic paste, shallots, cumin seeds, loves and cinnamon, combine with the coconut milk and keep aside.

02. Heat ghee in a pan and sauté the cloves, cinnamon and cardamom.
03. Now, add the rice and stir fry till it turns slightly brown.
04. Add the coconut milk and salt to taste and cook till done.
05. Heat a pan, fry the sliced onions in oil and keep aside.
06. Take a vessel, grease it with ghee, transfer the rice to it and sprinkle the lemon juice over it. Add the saffron.
07. Cover the rice with a wet cloth and bake in an oven at 350° F for 30 minutes.
08. Garnish with fried onions serve hot.
